Chili
~Kelsey Owens
This quick and hearty chili is a Champion Valley Farm family favorite! It’s perfect for walking tacos, Frito pie, or just a comforting bowl on its own. Plus, it’s super adaptable—blend the tomatoes for a smoother texture or swap in regular chili beans if you can’t find Fiesta-style.
Ingredients:
-
1 lb Champion Valley Farm ground beef
-
1 small onion, diced
-
1 packet taco seasoning
-
1 packet ranch dressing mix
-
1 can diced tomatoes (blended if preferred)
-
1 can chili beans (Fiesta-style or regular)
-
1 can corn, drained
-
Water (adjust for desired consistency)
-
Shredded cheese (for topping)
Instructions:
-
In a large pot, brown the Champion Valley Farm ground beef.
-
Add the diced onion and cook until softened.
-
Stir in the taco seasoning and ranch mix.
-
Mix in remaining ingredients except shredded cheese. Remember not to drain anything you want the liquid in the cans. Add water until you reach your preferred chili consistency.
-
Bring the chili to a boil, then reduce heat and let it simmer for at least 10 minutes.
-
Ladle into bowls and top with shredded cheese.
Enjoy this chili however you like—on its own, over chips for Frito pie, or stuffed into a bag of chips for an easy walking taco!
