March Madness Swedish Meatballs

~Kelsey Owens

A fuss-free recipe for a quick tray of happiness.

Meatballs:

  • 2 LB ground beef

  • 2 eggs

  • 2 tablespoons Italian Seasoning

  • 2 tsp basil

  • 1 tsp Salt

  • 1 tsp Peppers

  • 1 tsp Garlic Powder or 2 cloves minced Garlic

  • 1/2 cup Parmesan Cheese

Sauce:

  • 1/4 cup Butter

  • 1/3 cup Flour (gluten Free is what I use)

  • 3 1/2 cups Beef Broth

  • 1 tsp Worcestershire Sauce

  • 3/4 cup Sour Cream

  • Salt & Pepper to taste

Preheat the oven to 375 Degrees. Mix eggs, Italian Seasoning, basil, salt, pepper, and garlic together in a large bowl. Add beef and parmesan cheese and mix thoroughly.

Shape mixture into about forty 1 1/2-inch balls, a little smaller than a golf ball or whatever size your wish. Place on foiled lined ungreased, rimmed baking sheet. Bake in the preheated oven until no longer pink in the centers, turning halfway through cooking time, 15-30 minutes total.

While Meatballs are baking melt the butter in a large skillet over medium heat. Add the flour and cook, whisking, until lightly brown about 1-2 minutes. Gradually add in the beef broth. Add Worcestershire sauce, as you bring it to a simmer, whisk until thick, about 1-2 minutes.

Stir in the sour cream and salt & pepper to taste. Add cooked meatballs and give a good stir. Serve or mashed potatoes and ENJOY!
